i would like to know if there is a proper way to freeze zuchini? or is it unsafe to do this at all???

YES, YOU CAN FREEZE ZUCCHINI. PEEL,RINSE AND CUBE IT, PUT IT IN 1 CUP CONTAINERS OR WHATEVER YOUR RECIPES CALL FOR. I JUST USED ZIP LOCK BAGS AND FROZE. GOOD WAY TO ENJOY FOR THE WINTER.

It depends on what you want to do with the zucchini. For things like zucchini bread and muffins, I always found it easier to grate it then freeze it in empty margerine containers (Yup. Redneck tupperware) But for stir fry or recipies where I need it intact, then I cut it down to the size I'm going to need and freeze it. It works best if you spread it out on a baking sheet that has a sheet of parchment paper on it, then when they're frozen solid, you put them in a bag. That way, it won't stick together in one massive lump.

But if I'm going to be grilling it or broiling it, I only work from fresh, as freezing breaks the cell walls when the water freezes, so they get mushy when heated.

No need to peel zuchini just cut up in slices and/or wedges and slice up some onions, carrots and other veggies and seal in zip lock bags and freeze and you will have an excellent stirt fry mix to use.

Yes.. of course, it can be frozen.. BUT... when you thaw it out to use it, it is really limp, soggy and has lost its use as a SALAD but can be used for cooking, etc

I know some people who rave by using zucchini that has been frozen(preserved)... they even shred it.. or slice it prior t freezing and then thaw it and use it in breads and some add chutney to it and make a great zucchini/chutney.
