This is going to sound stupid but does anyone know how many different kind of cheeses there are? Does anyone have a list or something that they could post? I am trying to come up with a recipe for an event and I can't decide on some cheeses.. Thanks!

When one thinks of Cheese, the first country which comes to mind, is France. There are over 450 cheeses in France alone. I was told this on my last visit to France. Naturally, some are similar but overal this usually is determined by the region they are produced in and the category of cheeses are defined by the the following four methods.

1. Farm Cheese: This chese is made by a single farm which uses only traditional methods of making cheese, using all the ingredients which are available at the farm, such as the milk of the animals being raised at the farm.

2. Artisanal Cheese: This type is made from products which are available at other farms as well as its own.

3. Cooperative or Regional Cheese: This type of cheese is usually made by a group of local farms who collectively creatie their own "brew" as a joint venture.

4. Industria Cheesel: Any cheese which is commercially produced falls into this category. Kraft would fall into this category, for example.

Of course, France is not the only place in this World where you can find cheese. Practically every country on Earth has its own cheese.

Who could forget the famous English Cheddar? Or the Italian Provalone? Or the Greek Feta? Or Dutch Gouda? Or the famous Swiss cheese with holes in it? And the list goes on and on. Did you know, for example, that there is even a cheese which is made from the milk of a Yak, high up in the Mountains of Nepal? Or a cheese which is made from the milk of a Camel, in Saudi Arabia? The World is full of amazing cheeses.

You've got to decide if you want sharp or mild cheese, a dessert cheese, a cheese that is good for melting or something that you can spread on crackers. You've got to narrow down your options before you can start researching recipes or ideas. Good luck!
