One of mine is Peanut Soup - an African dish for which the base is pan melted peanuts, rich tomato and lots of chilli. Quite easy but a definite favourite!

Well, it's more of a speciality pastry, really - cookie, in fact. A nice, creamy, cream cheese sugar cookie half dipped in melted chocolate and chilled - tastes almost like a candy bar! Did I mention that they won first place and special recognition in a State contest?

It is called stuffed celery. I make a filler of cream cheese, blue cheese and a little milk. i blend it so it is smooth and creamy and then use a pastry decorator thing to fill the celery. Lastly, I sprinkle a little paprika over the top. Everyone loves it and it is always requested for parties. It is an appetizer that goes with almost every main dish.

Eggplant Caponata. A wonderful italian appetizer that has fried eggplants, separately sauteed onions, garlic, tomatoes, pinenuts, and parsley, all simmered together at the end for 10 minutes. Chicken and Angel hair pasta with Creamy Garlic Sauce

4 boneless skinless chicken breats; cooked and cut into strips
(16 oz.) angel hair pasta
2 tablespoons butter or margarine
2 large cloves garlic, minced
2 tablespoons
all-purpose flour
3/4 cup ready-to-serve chicken or beef broth
3/4 cup milk or light cream
2 teaspoons dried parsley flakes
Salt and ground
black pepper to taste
1/3 cup grated Parmesan cheese

Instructions:
Cook pasta according to package directions; drain. Meanwhile, in small saucepan, melt butter; add garlic. Cook over medium heat 1 minute. Add flour; cook 1 minute, stirring constantly. Stir in broth and milk. Cook, stirring frequently, until sauce boils and thickens. Add parsley, salt, pepper and cheese; stir until cheese is melted. Toss pasta with sauce; and top with sliced chicken.

I make chili and mexican lasagna. I take lasagna noodles, and layer with taco seasoned beef, spicy canned tomatoes, salsa, green chili sauce, and cheese. You can use fajita filling, too. I also sear an awesome t-bone, and make a great dipping oil for bread.

It's so easy, but I can make killer chicken spaghetti. I saute onions and garlic in a little oil and lime juice and then cook the chicken. Mm. Maybe I'll make that for dinner tomorrow!

Won ton soup. Chicken broth, baby bok choy and a little soy sauce when I stir fry the veggies. Wonderful... mmm... making me hungry!
