I had this salad at Cafe Lurcat and absolutely fell in love with it, and I can't find a similar recipe anywhere! Can you help me please?? It was very simple, nothing extravagant.

Apple Blue Cheese Slaw

Serves: 6-8 Printer Friendly Version

Ingredients
2 Red Delicious apples, cored and thinly cut julienne
1/4 cup thinly sliced red onion
1/4 cup dairy sour cream
1/4 cup mayonnaise
3 Tbsp chopped parsley
1 oz crumbled blue cheese
1 Tbsp lemon juice
1/4 tsp sugar
Salt and Pepper


Method
Combine all ingredients; mix well. For optimum flavor, refrigerate 6 hours or overnight.

This is the description for the salad: a simple salad of jullienned apples,a white cheese and chives tossed with a mildly sweet dressing.

This is the closest I could find to that description. I generally find the cider vinegar to be bitter but this is slightly sweetened so it may offset that. Julienne the apples to make it more similar and add chives. Try with different cheeses if the blue cheese doesn't seem right, although the various apple cheese salads I saw seemed to use blue cheese.

Ingredients:
***Vinaigrette***
3/4 cup olive oil
1/3 cup apple cider vinegar
3 tablespoons sugar
1 clove garlic, pressed
1/2 teaspoon salt
1/8 teaspoon black pepper
***Salad***
8 cups baby lettuce blend (Riviera or Spring Mix, etc.)
4 diced Granny Smith apples, cored but unpeeled
4 ounces blue cheese or feta, crumbled
1 cup pecans, toasted
1/2 cup dried cranberries (Craisins), optional

Directions:

Prepare vinaigrette by blending all ingredients thoroughly. Place in glass jar and shake until sugar dissolves. Set aside.

Just before serving, layer in large platter: lettuce, apples, blue cheese, toasted pecans and cranberries.

Shake vinaigrette to blend ingredients, then drizzle desired amount over salad. Use remainder for another salad.

Note: When cut, the apple flesh discolors quickly, so dip or coat them in lemon juice mixed with a little water and refrigerate in a sealed container.
