concentrate means that they took most of the water out of the juice before they put it in the can. that's why you have to put water back in and stir it up to get juice again.

To make concentrate juice, the water content in the fruit juice is remove by means of heating or fractional distillation system. Further process to fruit juice drink, the 'raw' concentrate juice is blend with certain amount of sugar or sweetener if you like, food gums of various type e.g xanthan gum or CMC or arabic gum as thickenig agent and some flavour and citric acid are added within appropriate levels in the process. Gelatin is not among the common ingredients used for beverage process. So, juice concentrate is a processed drink with mixture of fruit base and some edible chemicals. The main difference between juice concentrate and others is that juice concentrate is mix with plain water on the ratio of 1 part of juice concentrate to 6 of 7 parts of plain water. There are also pure juice concentrate, but the taste is not good.

Juice concentrate doesn't normally contain gelatin. Gelatin is used as a thickening agent, so it's quite possible some juice manufactures might be putting it in as a filler. Concentrated juice is a condensed form of juice. Excess moisture has been taken away, making it strong, thick and extremely intense in flavor.

Concentrate is fruit juice without added water, it's sort or like 100% juice, but it usually has already had sugar added to it before the water is taken out. It shouldn't contain gelatin, but if you are concerned just check the label.

a concentrate has much of the water removed usually by boiling. the resulting concentrate can't ever be reconstituted into fresh juice because of the heat exposure... gelatin is a reduction of heat fractured protein molecules, and is rarely found in fruit extracts. the gelatin like compounds found in fruit reductions are called pectins.
