I want to make them like the ones you get at KFC. I really hate fast food and I've tried to stop eating it, except for maybe In-n-Out, so I'd appreciate it if someone knows any recipes that produces a crisp, golden skin.

KFC Potato Wedges


shortening for Frying
5 Baking potatoes cut into Wedges
1 cup Milk
1 egg
1 cup flour
2 tablespoons salt
1 teaspoon pepper
1/2 teaspoon MSG
1/4 teaspoon Paprika
dash of garlic powder


Preheat shortening in to 375 F. Cut the potatoes into 16 to 18 equal side
wedges. Mix the egg and milk till well blended in a big bowl. Mix the dry
ingredients into a large bowl. Put some potatoes in the milk and egg then
into the flour mixture till well coated. Fry in fryer for 3 minutes remove
from the oil and allow them to sit for one minute and then cook them again
for 5 minutes or until cooked. It may take up to 6 minutes.







Grilled Cajun Potato Wedges

Serving Size : 4


3 large russet potatoes
1/4 cup olive oil
2 cloves garlic -- minced
1 teaspoon each: salt, paprika
1/2 teaspoon dried thyme leaves -- crushed
1/2 teaspoon dried oregano leaves -- crushed
1/4 teaspoon black pepper
1/8 teaspoon ground red pepper
2 cups mesquite chips


Prepare grill. Preheat oven to 425F.


Meanwhile, cut potatoes
in half lengthwise, then cut each half lengthwise into 4 wedges.
Place potatoes in large bowl. Add oil and garlic; toss to coat well.
Combine salt, paprika, thyme, oregano, black pepper and ground red
pepper in small bowl. Sprinkle over potatoes; toss to coat well.
Place potato wedges in single layer in shallow roasting pan. (Reserve
remaining oil
mixture left in large bowl).


Bake 20 min. in oven.


Meanwhile, cover mesquite chips with cold water; soak 20 min. Drain
chips; sprinkle over coals.


Place potato wedges on their sides on grid. Grill, on covered grill,
over medium coals 15-20 minutes or until potatoes are browned and
fork-tender, brushing with reserved oil mixture halfway through
grilling time and turning once.

Garlic and Oregano Sweet Potato Wedges:

4 small sweet potatoes or yams (about 1 1/2 pounds), peeled and cut into wedges
5 sprigs fresh oregano
1/4 teaspoon kosher salt
2 tablespoons olive oil
2 tablespoons pumpkin seeds
1 garlic clove, peeled and minced
1 teaspoon lemon juice

Heat oven to 450 degrees. On a baking sheet, combine the sweet potatoes, oregano, salt, and half the oil. Toss well and roast for 40 minutes, or until tender and golden, flipping once halfway through. Remove from oven.

Meanwhile, in a skillet, lightly toast the pumpkin seeds over medium heat, stirring occasionally, about 5 minutes. Remove from heat. Add the garlic, lemon juice, and the remaining oil and stir together. Add the sweet potato wedges and toss well.

Yield: Makes 4 servings

Ok, here is a serious answer, and they will be good!!!!...just listen and trust me, I cook for a living, and have for years!!.......Bake a few potatoes, yes bake.... depends on how many you want to make....Lets just say you want some for you and your loved one ok?.......Bake two potatoes, let them cool....put them in the fridge overnite, trust me.....cut them in half, then cut them again, then cut them again...take Buttermilk, yes buttermilk, its the best!....take some flour, lets say 2 cups or so, add salt and pepper, about a tablespoon of each, dip the cold potatoes in the buttermilk, then the flour, put on a cookie sheet or plate, and let them sit for just a few minutes, or you can freeze them as is!!!... heat up your oil to frying temp., you'll be able to smell when the oil is ready, do not leave un attended!.... drop in and fry to a golden brown, instant potato wedges! If you cook them raw, the outside will be brown, but the potatoes will be raw inside!! You can add Cayenne pepper if you like them hotter, but don't add paprika, cause paprika burns, flour, salt and pepper is the basic and is good....sooo good!!!!

Put oil in a spray bottle and oil the skins when you bake your wedges. When they're done, load up the fillings, and bake a tidge longer. Yummy goings.

The ones served at KFC are batter dipped at the plant where they are made. I dont know if you can make them like that at home.

you should try searching it on recipes.aol.com They always have the best recipes for something like this.
