Meat kinda grosses me out in a stew-style dish, so I want to make a vegeterian version of chili and want to make it as vegetable-ful as possible! Any suggestions?

Wait justa full minute...Nearly every one of these refer to 'cans' of beans. WAY WRONG!! Start with (a couple packets of) 'dried' red kidney beans! Add to a large pot both packs, a tablespoon of salt, a tablespoon of pepper, a tablespoon of garlic granules (or fresh bulb), 4-6 red chilli peppers, one large quartered onion, those fancy large brown mushrooms (about 6-10 also quartered), fresh corn sliced from cob (2 cobs worth), pitted black olives (sliced), a medium bell pepper, sliced/cubed. Add enough water to near capacity & bring to a boil. Reduce heat to low & allow to simmer 2 hours. Test taste to insure beans have been cooked to 'tender'. If anyone wants meat, add chunks of roast beef, browned hamburger or even sausages/hotdogs on the side!
By the way, contrary to popular belief, there should be NO zuccini, NO carrots & NO tomatoes in chilli...corn is a strech...It's not rocket science, it's better, it's chilli!!

Here is a great vegetarian chili recipie

1 tablespoon vegetable oil
1 cup chopped onions
3/4 cup chopped carrots
3 cloves garlic, minced
1 cup chopped green bell pepper
1 cup chopped red bell pepper
3/4 cup chopped celery
1 tablespoon chili powder
1 1/2 cups chopped fresh mushrooms
1 (28 ounce) can whole peeled tomatoes with liquid, chopped
1 (19 ounce) can kidney beans with liquid
1 (11 ounce) can whole kernel corn, undrained
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried basil

DIRECTIONS:
1. Heat oil in a large saucepan over medium heat. Saute onions, carrots, and garlic until tender. Stir in green pepper, red pepper, celery, and chili powder. Cook until vegetables are tender, about 6 minutes.
2. Stir in mushrooms, and cook 4 minutes. Stir in tomatoes, kidney beans, and corn. Season with cumin, oregano, and basil. Bring to a boil, and reduce heat to medium. Cover, and simmer for 20 minutes, stirring occasionally.

Here's my family's favorite vegetarian chili recipe:

1 can kidney beans
1 can pinto beans, drained
1 can black beans, drained
1 can diced tomatoes
paprika, chili powder, cumin and onion powder, to taste

Place in medium saucepan over low heat and simmer for 15-20 minutes. Serves 4-5.
It's simple, quick and delicious. To make it with more vegetables you could add corn, mushrooms, diced zuchini or yellow squash, finely shredded spinach, etc.

VEGETARIAN CHILI

INGREDIENTS:
1 (12 ounce) package frozen burger-style crumbles
2 (15 ounce) cans black beans, rinsed and drained
2 (15 ounce) cans dark red kidney beans
1 (15 ounce) can light red kidney beans

1 (29 ounce) can diced tomatoes
1 (12 fluid ounce) can tomato juice
5 onions, chopped
3 tablespoons chili powder
1 1/2 tablespoons ground cumin
1 tablespoon garlic powder
2 bay leaves
salt and pepper to taste

DIRECTIONS:
In a large pot, combine meat substitute, black beans, kidney beans, diced tomatoes, tomato juice, onions, chili powder, cumin, garlic powder, bay leaves, salt and pepper. Bring to a simmer and cover. Let the chili simmer for at least 1 hour before serving

VEGETARIAN CHILI

Ingredients
one 14 1/2-ounce can tomatoes
one 15-ounce can tomato sauce
one 15 1/2-ounce can cannellini beans
one 16-ounce can light red kidney beans
one 16-ounce can dark red kidney beans
one 4-ounce package chili mix
one 4 1/2-ounce can chilies
2 tablespoons onion flakes
1/2 teaspoon chili powder
1 tablespoon sugar
one 15-ounce can water

Steps
1. Place all ingredients in soup pot and stir to mix.
2. Place on medium heat, stirring every 3 minutes until chili starts to slowly boil.
3. Turn heat to low.
4. Cook chili for 30-45 minutes, stirring occasionally. Serve

VEGETARIAN CHILI

1 tbsp. safflower oil
1 tsp. minced garlic
1 1/4 c. chopped onions
2 c. crumbled firm tofu
2 c. canned chopped tomatoes
3 c. vegetarian baked beans (partially drained)
1/2 c. ketchup
1 1/2 c. frozen corn
3 tsp. paprika
1 tsp. ground cumin
3/4 tsp. chili powder
1/4 tsp. cayenne pepper
2 tbsp. masa

Before you begin, thinly slice tofu and lay out on a towel, cover with another towel, let stand for 30 minutes. (Don't let tofu scare you it doesn't change flavor of chili, and it's an excellent source of protein.)
1. Heat oil, garlic and onions in Dutch oven. Saute' until onions begin to soften, then add crumbled tofu and saute' for 4 minutes. Add tomatoes, beans, tomato sauce, and corn mix well. Stir in spices and masa. 2. Cover and simmer over medium low heat until chili is heated through and flavors are combined. Stir occasionally. Cook about 30 minutes.
Serves 8-10.

Hi Moon O. I am a vegetarian and there are some wonderful recipes you can get in books or on line. They can help you include beans, carrots, celery, corn, tomatoes, onions, peppers, and other goodies. Served with some good tortilla chips this is great for the cold months.

If you don't like meat but still want protein I'd suggest adding chili beans.

Try beans, corn, zucchini, squash and tomatoes. Mince your veggies and saute them first in garlic and onions. You might want to try hydrolyzed vegetable protein (fake meat) it's great for texture and adds protein to your chili.

Make it like usual without meat & add veggies such as diced carrots, diced zuchinni, onions, & I personally like sliced black olives in mine.

peppers, celery, chili or kidney beans would all be okay in it.
