Try a nice park and use there ampitheatre for the ceremony, and then put up large tents for the reception!

Just a tip it is known that June is bad luck to get married
I would recommend July or August and many people get married in October atleast I did and happy to report coming up on my 7th anniversary. The summer months depending on were you live are tourist months and everything goes up in price so if you have a budget you want to stick with I would recommend the fall or the spring time and hey alot of people do the christmas thing to because airfare to certain places is cheaper in these months.
Check out golf courses in your area most will have a lodge or as they call it a clubhouse and will have catering whats more if your
fiance likes to golf with his pals he could have a round before the wedding having both the wedding and the reception in the same place will also save some money think of having a small buffet rather then a plate service as well this will usually drop the price pp as well have fun and congrats married life is awesome. Also ask if you can bring your own wine or beverages if you can make some wine at a local place and maybe get your fiance to look at making some beer for the guys.

Have you tried looking for a restaurant with nice decor or a garden? More and more young people are going for nontraditional wedding settings. Some restaurants are beautiful and make the perfect place for a wedding. Many will close the whole restaurant for the affair if it brings in enough money. Most restaurants have menus for large parties or receptions - they will be much less expensive than a hotel.

the omni is a great place but June is the peak of wedding season and you're in prime time. have you thought of a sunday or ssaturday afternoon? there is also waiting until July - you can usually get a deal or even memorial day weekend. you have an okay amount per person -- 7000/125 = 56 inclusive of tax & service charge. granted it'd be a cash bar situation but, nowadays that's not uncommon.
seriously if you're thinking June i'd recommend an afternoon or sunday or the non prime June wedding month.

Have you tried a museum? I know Houston has tons of museums and some really nice ones. It's not that expensive to rent them out either and some come with their own caterers.

Why not just do cake at punch at 3pm and then everyone eats lunch BEfore the wedding?? Save a bundle that way..

HIRE A CATERER AND RENT TENTS WHICH HAVE AIR CONDITIONING....THEY HAVE SOME REALLY PRETTY DESIGNS FOR WEDDINGS WITH FAKE WINDOWS AND PEAKS.... RUN A RED CARPET TO EACH AREA.....HAVE A FRIEND WITH A LOVELY FIELD.....PUT IT THERE OR GET AN EASEMENT FOR PARK USE SOMEWHERE.....YOULL LOVE IT BRING IN YOUR OWN FLORIST AND BAR.....
