Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Tandoori Chicken
Ingredients
12 Chicken drumsticks and/or breast pieces (skin removed)
1 cup plain yoghurt or 2 cups Buttermilk
1 1/2 tbsp. red chilli powder
1 tbsp. ginger powder
2 tbsp. coriander powder
1 tbsp. garlic powder
1 tbsp. cumin powder
1/2 tbsp. garam masala
Meat tenderiser (optional)
2 tbsp. salt (use less if tenderiser contains salt)
Directions
Prick the chicken pieces with a fork all over.
Apply the tenderiser to the chicken pieces and let it stand for an hour or so.
The marinade: Take a wide and deep bowl about 12 2 inches wide and deep enough to hold all the chicken pieces.
Add the yoghurt plus one-cup water or the buttermilk with no water into the bowl.
Add all the spices from nos. 3 through 8 into the bowl and stir to form a homogeneous mixture.
Now add the chicken pieces into the mixture, so that they are all covered with the paste/mixture.
Cover the bowl with a lid and let it stand for 6 hours.
If you plan to marinade for 12-15 hours, put it in the refrigerator.
The more time it is marinated, the better it will absorb the spices and the tastier it will be.
When you are ready to grill the chicken, apply melted butter to the the chicken pieces with a brush or spoon all over and you are ready to grill the chicken on the barbecue in the normal fashion.
Turn over the chicken pieces when they look brownish red in colour or darker if you prefer it well done.
Slice finely onion into rings, add some salt and lemon juice to it, to be served as a salad with the tandoori chicken.
Lemon juice sprinkled on the cooked pieces also adds to the flavour, if you wish.

my favorite comfort food:
Four-Cheese Mac & Cheese
• 3 cups uncooked elbow macaroni, cooked according to package directions
• ¼ cup all-purpose flour
• 1/8 t. ground pepper
• 2-1/2 cups skim milk
• 6 oz processed cheese, cubed (such as Velveeta – you can use light)
• 2 oz light cream cheese, cubed
• ½ cup (2 oz) shredded sharp cheddar (the sharper the better!)
• 2 oz (1/2 cup) grated Parmesan cheese
1. Combine flour and pepper in a 3-quart or larger pan. Add ½ cup milk and whisk until no lumps remain. Gradually add the remaining milk while continuing to whisk.
2. Cook over medium heat for about 8 minutes or until the mixture comes to a soft boil. Cook for an additional minute, stirring constantly.
3. Reduce heat and add the cheeses, stirring until melted. Remove from heat and stir in the macaroni.
4. You can eat it straight out of the pan or you can bake it in a baking dish in the oven at 350 degrees for 30 minutes. The official recipe calls for 6 onion melba toast crackers to be crushed (1/3 cup) and combined with 1 T. melted margarine or butter and sprinkled over the top of the macaroni. Then they bake it per the above until golden brown and bubbly. Frankly, I can never wait that long and end up eating it right out of the pan.

Praline Cupcake Recipe
INGREDIENTS:
1/3 cup butter, softened
2 cups sifted cake flour
1 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 egg
1 teaspoon vanilla extract
1/2 cup chopped pecans

Praline Topping
1/4 cup melted butter
3/4 cup brown sugar
18 pecan halves
PREPARATION:
Cream softened butter in mixing bowl. Sift in flour, sugar, baking powder, and salt. Add about half of the milk and the egg; mix until flour is thoroughly moistened. Beat for 2 minutes. Add remaining milk and the vanilla; beat 1 minute longer.
Stir in chopped pecans. Place paper baking cups in muffin cups and fill about 1/2 full with the batter. Bake at 375° for 25 minutes, or until cupcakes spring back when lightly touched with finger.
Combine melted butter and brown sugar; spoon over hot cupcakes. Place a pecan half in the center of each; return to oven and bake 5 minutes longer.
Makes 18 praline cupcakes.

Blueberry Muffins to die For
I get rave reviews and recipe requests EVERY time I make these.
1 1/2 cups all-purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg 1/3 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 teaspoons ground cinnamon
DIRECTIONS:
1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
4. Bake for 20 to 25 minutes in the preheated oven, or until done.

10 ounces Alaska dungeness crab meat (about 2 cups), thawed if necessary
1 cup soft bread crumbs
1/4 cup minced green onion
1/4 cup celery, minced
3 tablespoons mayonnaise
1 egg, beaten
Generous dash bottled hot pepper sauce
Dash salt and pepper
Flour
3 tablespoons vegetable oil
Combine all ingredients except flour and oil; mix well. Chill.
2.Shape into 4 cakes, about 3/4 inch thick. Dust with flour. Sauté crab cakes in hot oil on both sides about 10 minutes or until golden brown.
