I seen one in Italy, but it has a floating lid...that won't work for beer. Must be a completely anaerobic environment.

Are you using the vats for fermenting or for holding after the ferment is complete...secondary/serving?

If you're using it for fermentation, a lid that just lays over the top, even hinged down the middle (easy access) will work just fine. Microbreweries use this style. At that quantity, the CO2 production from the ferment will adequately displace the oxygen and provide an anaerobic environment even when it's not pressure tight. As long as the floating lid has a lip that extends down past the rim of the vat, you're ok. CO2 is denser than air so that even at a slow ferment as you get towards the end, there will be a cushion of CO2 that will not easily displace.

I have no idea who makes them. But Budweiser is about to close their brewery in St. Loius, Missouri. You might want to do a search for someone that works there, and see if you can get your hands on one of theirs. And no, I don't know if you could actually accomplish it, just a thought. LOL
