Parmesan Chicken Recipe
1 clove garlic, minced
1 stick unsalted butter (1/2 cup or 1/4 pound), melted
1 cup dried bread crumbs
1/3 cup grated Parmesan cheese (or 2/3 cup if you are using a Microplane zester)
2 Tbsp chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon garlic salt
A large pinch of Italian seasoning (herb mix)
1/8 teaspoon ground black pepper
2 lbs of skinless, boneless, chicken meat, cut into pieces no larger than 2x2 inches
1 Preheat oven to 450F.
2 In a bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, Parmesan, parsley, salt, garlic salt, Italian seasoning, and pepper. Dip chicken pieces into garlic butter, then into crumb mixture to coat.
3 Place coated chicken pieces on to a 9x13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake uncovered 15 minutes, or until chicken is cooked through and juices run clear. Note that the chicken will get much more browned on the bottom side than on the top.
Serves 4-6.

Tons of things you can use instead of shake and bake. Most are much yummier, so you won't go back.
My favorite is tortilla chips, I dredge the chicken in a little hot sauce first, to get a southwest flavor. Not very low soduim though.
Crushed Caesar style croutons are good also, again salty though.
As other posters mentioned, corn flakes, crackers, stuffing mix also work as well.
A food processor or blender makes quick work of smashing up all of the above coatings.
There can make a million variations with plain bread crumbs, and control the sodium.
Italian style - add basil, garlic powder, oregano, parm cheese
Greek style - oregano and mint
Curried - mix in curry powder
Hot and Spicy - mix in cayene pepper
Just open up your spice drawer and see what looks good!

1 cup biscuit mix
1 teaspoon paprika
1 teaspoon poultry seasoning
1/2 teaspoon pepper
Mix together.
To use, place in a paper bag and add up to 3 pounds chicken.
Shake.
Bake in greased pan at 350 till done.
Or try this one:
SHAKE AND BAKE SUBSTITUTE
2 Tbs cornmeal
2 Tbs flour
1 tsp sugar
1/2 tsp sage
1/2 tsp paprika
1/2 tsp onion powder
This makes about the same as one envelope of the mix for pork chops. Just coat them with it and put in a greased baking dish and bake uncovered at 400 degrees for 25 to 30 minutes.

I use progreso bread crumbs, they have a few flavor choices. First dip in egg and then in the crumbs, I use the Italian kind you can add butter to your pan or if your gonna cook by Oven, then after a while add the butter to top of chicken and let it melt, also I love to spritz with lemon. same way the butter. sorta a lemon chicken, or no lemon and add fresh garlic, something different. you could always use bread crumbs and mix with Mrs Dash original Table blend. It's got allot of great spices, perfect for chicken. Be creative, have fun with cooking...

Bread crumbs and almost any spice. Some people insist on a binder, like raw egg, to make the crumbs stick better, but I personally just use the dry mix and have no troubles.

Equal parts of flour and that crappy parmesean cheese that comes out of the green can. Add some freshly ground black pepper and a little salt.

yea, they have one its called kellogs corn flake crumbs way less sodium and it tastes good. or you can make your own chicken coating, crush some corn flakes, add a lil garlic powder, some salt, pepper and their you have it your own coating!
