That's a challenge, but possible; I'm guessing you're doing 3 snack-like meals and one larger dinner? There are many mild Indian meals (vegetarian or not) that have coconut milk and lemon grass, a mild spinach korma with tofu, I found this crazy bag of nuts at Trader Joe's that's spicy chilies with Thai basil that would be absolutely wonderful toned down in some white or brown rice, or with some cellophane noodles with sauteed beef or chicken thrown in; How about a great Posole Soup, minus the tomatoes, add chicken or pork tenderloin and modify the recipe (check on-line, there are so many); Crepes can be made a bunch at a time, frozen with wax paper in between and thawed in minutes for either sweet or savory recipes( with berries and a quick maple reduction sauce) or a la Reine (chicken, forget mushrooms and substitute zucchini); pasta can be made into a fritatta with eggs and veggies, and cheese; homemade grits or oatmeal may take 20 minutes, but they're cheap and good; grow some herbs from seed indoors; buy a pack of won ton wrappers and make steamed dumplings; simple, inexpensive; try and shop every 2 days so things stay fresh and you take advantage of daily bakery and meat specials; a couple of apples, grapes, oranges on hand for some "snacks"; also, some good, but inexpensive chocolate, peanut butter, jelly/jams...good luck!

Drain off the fats, upload to a pot with each and every little thing else. convey to a boil, turn down the warmth and simmer for half-hour, stirring now and lower back to maintain it from sticking and burning. desire that helps.
