CHICKEN FAJITA CASSEROLE
6 boneless skinless chicken breast halves
1/4 cup prepared favorite Italian salad dressing
1 (10 3/4 ounce) can condensed cheddar cheese soup (I like Cambells)
1/2 cup Pace salsa
12 flour tortillas
4 green onions, thinly sliced
1 small avocado, sliced (optional)
In large shallow dish, arange chicken. Pour dressing over chicken, turning to coat. Cover, refridgerate about 30 minute.
To grill: Remove chicken from bowl and arrange on grill directly above medium coals. Grill uncovered about 15 min, turning once during cooking.
In saucepan combine salsa and soup. Over medium heat, heat through, stirring occasionally.
Meanwhile, heat tortillas according to package.
Slice chicken into thin strips. Arrange down center of each tortilla, top with desired amount of onions, avocado, and soup mixture.
Roll up and devour!

Chicken Fajita Casserole
Ingredients:
2 teaspoons oil
1 bag shredded cheddar cheese
1 bag shredded Monterey Jack cheese
3 chicken breasts cooked and shredded
1 onion diced
1 green pepper diced
1 tomato diced
1-3 jalapeno peppers (depending on taste) finely chopped
1 can chicken broth
1 can cream of mushroom soup
1 can cream of chicken soup
1 tablespoon cumin
1/2 teaspoon chili powder
2 cloves chopped garlic or 1 teaspoon garlic powder
1 package large tortilla cut into 4-inch pieces
Directions:
Place oil in pan. Saute chicken, onion, green pepper and tomato for a few minutes. Add jalepenos, broth, soup and seasonings. Cook until reduced by one third.
In a medium casserole dish layer as follows: Soup mixture, tortilla pieces to cover, cheese.
Repeat layering until all ingredients are used.
Heat in oven until cheese is melted.

I use this one , but substitute the cheese soup or naco cheese soup, with mushroom one, and add tons of cheese on top.
FAJITA RANCH CASSEROLE
Approximately 1 1/2 lbs. cooked chicken fajita meat
1 med. pkg. restaurant style tortilla chips
1/2 lb. Velveeta cheese, grated
1 lg. red or green pepper, chopped
1 lg. onion, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 can chicken broth
1 can Rotel diced tomatoes
Mix all ingredients, except chips, together in a large bowl. Place half of chips in bottom of oblong baking dish and pour half of mixture (approximately 3 cups) evenly over top. Repeat layers. Bake at 350 degrees for 30 minutes.

I use a bag of the wide egg noodles, chicken breasts cut in-2
strips, (seasoned of course), cut up onions, red pepper, green
pepper, & Yellow peppers, Boil the noodles, butter them. Mix in
Muenster cheese & Pepper cheese, with whipping cream (sorry
I don't use cheese in a can) It tastes much better when U make
it from scratch. Add some CAVENDARS seasoning (it's the BOMB!) U can use it in anything-it's a greek seasoning(Yellow
container) chili pwdr, salt & pepper. Sautee' the veggies in a skillet w/butter (real butter) Put them in-2 the pot w/the noodles
stir the cheeses & the cream & chicken until it's creamy & then
put in-2 a cassarole dish (hopefully U're oven's been preheating)
(400)--Spread the mixture eavenly & put more cheese on top.
Bake @ 400 4 3 min. turn it down 2 300 4 10 min. let it cool 4
about 20 min. ENJOY!! Let me know how it turned out!

8 Tyson® Fresh Chicken Breast Tenders
or 8 Tyson® IFF Boneless, Skinless Chicken Tenderloins
1 box Uncle Ben's® Chef's Recipe™ Traditional Red Beans & Rice
1 can black olives, 4 oz. sliced, drained
1 can green chiles, 4 oz., drained and diced
2 cups water, boiling
1 can diced tomatoes, 15 oz.
1 cup Monterey Jack cheese, 4 oz., shredded
1 cup tortilla chips, crushed
Cooking Instructions
1. Preheat oven to 350°F. Wash hands. Place red beans and rice (do not include seasoning packet) in 13 x 9-inch baking dish; top with olives and chilies. Place chicken in baking dish. Wash hands.
2. Combine boiling water, tomatoes and contents of rice seasoning packet in medium bowl. Pour over chicken mixture. Cover and bake 45 minutes. Remove cover; sprinkle with cheese and tortilla chips. Bake 5 minutes longer or until rice is cooked and chicken is done (internal temp 170°F).
Serving Suggestion: Serve with a tossed salad and lime sherbet for dessert. Refrigerate leftovers.
Substitution Tip: To substitute Tyson Individually Fresh Frozen® Boneless, Skinless Chicken Tenderloins, simply increase cooking time by about one-third.

Poach hen breasts ( place in boiling water for 5 min, turn off warmth and enable relax interior the boiling water, coated for 10 extra min).
