Sometimes the filters seem flimsey , so I normally use two ; but I wondered if that has an effect on the taste . .

Yes, less of the coffee's natural oils will flow through. If you wet the side of the basket and then press the sides of the filter to the sides of the basket they are less likely to fold in so you won't get the grounds in your pot. That , I am guessing, is the issue?

No the taste should be the same, you will create a longer time for your coffee to actually brew. The double filter will slow down the perking process.

It allows the water to drain a little slower thus making the coffee a bit stronger.

No, it effects the flow of the coffee so it may take longer to get your cup of mocha that's all.

no and also add a pinch of salt to you grounds. wont be as bitter
