I grew up in Alabama and my grandmother used to make them every time she made fried catfish. I think it might just be a southern thing, it wasn't sweet. It was basically just cornbread batter that had been fried like a pancake.

Hoe Cakes from Paula Dean
================
1 cup self-rising flour
1 cup self-rising cornmeal, or from a mix (recommended: Aunt Jemima's)
2 eggs
1 tablespoon sugar
3/4 cup buttermilk
1/3 cup plus 1 tablespoon water
1/4 cup vegetable oil or bacon grease
Oil, butter, or clarified margarine, for frying
Mix well all ingredients, except for the frying oil. Heat the frying oil or butter in a medium or large skillet over medium heat. Drop the batter, by full tablespoons, into the hot skillet. Use about 2 tablespoons of batter per hoecake. Fry each hoecake until brown and crisp; turn each hoecake with a spatula, and then brown the other side. With a slotted spoon, remove each hoecake to drain on a paper towel-lined plate. Leftover batter will keep in refrigerator for up to 2 days.

Hoecake: a cornbread made of cornmeal, salt and water, which is very thin in texture, and fried in cooking oil in a skillet. It became known as "hoecake" because field hands often cooked it on a shovel or hoe held to an open flame.

Recipe for Hoe Cake
1 1/2 c. corn meal
1 c. all-purpose flour
1/4 c. Crisco oil
1 1/4 c. buttermilk
1/3 c. sugar
2 eggs, beaten
1 tsp. salt
1 tsp. soda
Combine cornmeal, flour, sugar, salt and soda in medium bowl. Add eggs, oil and buttermilk. Stir just until ingredients are moistened. Pour into heavily oiled skillet 1/4 cup of batter for each hoe cake. Fry over medium-high heat 1 or 2 minutes or until golden brown on each side. Use additional oil if necessary. Hoe cakes are called Hoe Cakes because they are made in a Hoe Skillet... they are basically the same thing as a pancake but most often are used with cornmeal instead of flour!

Hoe cakes are made from cornbread batter, but instead of being cooked in a skillet they are cooked in a skillet or on a grill, just as a pancake would be cooked.
