Well, that depends on who you ask and what definitions you're using.

The truth is that "white chocolate" is a product of the very same cacao bean that produces chocolate.

If you've read the article, Making Chocolate, you already know that when the cacao bean is processed, a susbtance called "chocolate liquor" is created. And you also know that this liquor can be further processed to create two distinct products: cocoa powder and cocoa butter.

While "brown chocolate" has its essence in chocolate liquor or cocoa powder, the essence of "white chocolate" is the cocoa butter.

So white chocolate has its origin in the cacao bean, but has no cocoa solids.

However. Because (in the US) the FDA does not regulate the use of the term "white chocolate," you can actually find "white chocolate" that is made with non-cacao fats such as vegetable oil.

So is white chocolate really chocolate? Here's how I look at it. If the "white chocolate" in question is actually made with cocoa butter, it's chocolate. If it's made with corn oil? It ain't chocolate.

Just one Momma's opinion... though most chocolatiers will argue that "technically, no, it's not chocolate."

No pinky, white chocolate is mearly a mixture of mainly butter, sugar and cream, with of couse all the little, tiny stuf that has a million letters and you can pronounce it.

It really depends on who makes it. True white choclate must contain cocoa, which is of course brown. Read the label.
It always confuses me.

yes b/c it's made from the same ingredients of chocolate, cocoa butter combined with milk and a sweetener, it's only flavored with vanilla.
