I assume you know that food enters your mouth, down your osopheagous into your stomach which the Hydrochloric Acid braks the food down. The food passes into your intestinal tract where the nutrients are absorbed into the bloodstream, and the waste comes out the other end as poop.
Right
If you know that, then a Fart is easy. In simple terms, it is an Air bubble in the digestive process. As the air passes over the sphincter, it creates a noise. The harder the air rushes out, the louder the noise. The more waste sitting behind your sphincter, the smellier the fart.
Simple

congratulations on your question i have never laughed so much in my life and the replys are stunning here is my contribution, when you fart it is an early warning of whats to come, you have to watch out though if you fart too hard you can get follow through and that can be messy.
when the misses farts she coughs at the same time and then blames me when the aroma mixes with the oxygen in the air, the best place to fart is on those chairs at the airport you can then blame the chair because they make similar noises when ya botty sticks to them.
the definination of a fart is wind from the pipe anus (hope you are smiling now)

If you mean why do MEN fart? Because it is fun. (Here, pull my finger). LOL.
Also, an accumulation of methane gas in the gut would cause us to float in the air like a balloon. Then at a certain pressure, we would explode. That would be both messy and fatal.
So always, remember, farting is a good thing. A VERY good thing.
brrrrrrrrrriiiiiiiipppp. Ahhhh.

Gas
Most people produce 1 to 3 pints of intestinal gas in their large intestines (colons) every 24 hours and pass gas an average of 14 times a day. The gas is made up primarily of carbon dioxide, hydrogen, and in some families, methane, that is mixed with nitrogen and oxygen from room air that is inhaled or swallowed. The carbon dioxide, hydrogen, and methane are produced by bacteria in the large intestine while they digest undigested food that reaches the large intestine. Although these gases are odorless, the bacteria also may produce small amounts of sulfur-containing gases that are foul-smelling. It is important to distinguish between increased flatulence (farting) and foul-smelling flatulence.

Why do we pass wind?
And now for one of the less attractive bodily secretions: gas. Well, given that our bodies are like 24-hour factories, constantly processing air, liquids and foods, it's hardly surprising that we produce a by-product or two. In fact, on average, we pass wind 15 times a day, and it is normal to produce up to three and half milk bottles' worth of wind daily! But have you ever wondered why it is that eating beans, cabbage, broccoli, curry and beer can result in smells that could only be described as rotten eggs? The culprits: smelly substances like hydrogen sulphide that are produced when food is broken down in the colon.
As for those sometimes embarrassing and inopportune tummy rumblings, they are produced when the liquid and gas contents of the intestine are shunted back and forth by contractions of the gut. They can be the product of hunger, anxiety, fright and, yes, unfortunately for us, sexual excitement!

All foods contain a natural form of gas obtained during growth. When we eat these foods more gas is produced from our stomach acids. Some foods like beans and green leafy vegetables contain more gas than other foods producing more gas in our stomach. If we didn't release these gases from our bodies imagine how your stomach would feel.
