I would say that one large banana mashed up would equal 1 cup of banana. For making banana bread, i would recommend 1-2 OVER RIPE bananas... so basically you should use the bananas when they are too brown for you to normally eat. That gives them the most flavor in the bread, and makes them easier to work with!

definitely more than one. when a recipe called for one cup I always used 3 med sized bananas. they shrink as they brown. all my banana bread turned out great using 3 for one cup
