I thought that so long as the fish was extremely fresh, most types of fish would be good for sushi. Now someone tells me that when it is tuna, it should be 'blue fin'. What fish can I use for sushi??

There is really a small list of fish that are ok for Sushi or Sashimi use. They would include Salmon, Ahi Tuna, Albacore Tuna, Eel, and scallops. You also must be sure that where you purchase the fish is sushi grade fish... if your buying whole fish, you want to be sure that they eyes are clear, not cloudy on the fish... that will guarantee a fresh fillet.

there is a very thin line between eating something sushi and something you caught in a lake. Mackrel, Tuna, Salmon are a few that are actually served in a sushi resturant. You may want to rethink serving your friends raw fish if you have no idea about what fish is sushi grade. You could give someone food poison and I have heard that is the worst thing you can do to someone.

Salmon and tuna are both good choices, so long as you can trust they are fresh and clean.
If you're worried about food safety, try smoked salmon, or cooked shell fish (like crab, shrimp, or scallops).

there is fish known as sushi grade which means it is top quality for sushi so if u go to your fish monger ask for sushi grade.(it's a little pricey)

salmon would be good but make sure its really fresh as buying a not so fresh one could mean it has already grown some bacteria on it...try sea bass as well. if you're not really sure, try buying a sushi cookbook from booksale/other bookstores. its really cheap and you will learn alot from it. mine cost me just £1.99
