Banging the bottle creates more bubbles, that in turn creates pressure in the bottle, causing the foam/liquid to spill from the top.

The fizz is caused by the release of pressure from the bubbles. You can tap it with another bottle, another brand, a hammer, or tap shoes - won't matter.

In your particular scenario, it is due to the mini shock of the clinking bottles.

Because the glass bottles are extremely hard surfaced, even a tiny shock will "shake" millions of bubble of gas from the liquid. The shock is very brief, so the foaming will not last long, nor explode in the manner it would if you shook the bottle violently.

if you bang the bottle again with a hard object (ie cigarette lighter) it will stop foaming
