The best grilled cheese sandwich, as made by my dearly departed Grandad, as as follows:
*Get some fresh Italian bread and slice it thick
*Generously butter one side of each slice, end to end (and use real butter, not margarine)
*Slice pieces of good cheddar cheese
*Assemble the sandwich and put on a piece of tin foil
*Put under the broiler in your oven on about the middle rack of the oven
*Keep an eye on your sandwiches. When one side starts to get golden brown and crispy-looking, flip it over and repeat on the other side
You will never have soggy sandwiches with this method. Also, a great condiment for these sandwiches is yellow mustard, like French's brand. (Really! Trust me, it's great!)

If your bread looks toasted but is still soft, you are probably using too much butter, oil, or whatever shortening you use.
Very lightly spread soft butter, margarine or a blend on the bread. You want to cover the bread using as little as you can. If you are using oil put less in the pan, an amount that spreads to cover a area about 1/2 the size of your bread slice. Place the sandwich in the pan or on your griddle and move it about a little to make sure the shortening is spread evenly over the bread. Do the same when you flip it over.
A specific shortening: butter, oil, or margarine is not necessary. I use them all with good results. My favorite grilled cheese sandwiches use two slices of cheese, one slice each of two different varieties. Try Colby-Jack and Muenster, American and Provolone, or Mozzarella and Pepperoni cheese.

1.Melt a stick of butter in the microwave for 12 seconds so it is easy to spread it on the bread.
2. Spread the butter on one side of each piece of bread
3. In a pan build your sandwich then cover it up with a pot lid and turn the burner on so it is a little over medium
4. Wait for the butter on the top to melt then flip
5. Wait about the same amount of time before you take your sandwich
6. Enjoy

Put pan on stove over medium heat until hot. During heating, begin slicing cheese and getting bread.
Butter pan, or bread, whichever you prefer, and put one side of sandwich on pan with cheese on top. Then add the top slice of bread right away. Lower the heat and cover to help the cheese melt.
Check to see if bread is brown after no more than two minutes, although more time may be needed for desired results. When bread is brown enough, butter pan again and flip.
Know that the second side should brown faster so be prepared to check it in no time. When it is cooked to your satisfaction, turn off the stove, put your sandwich on a plate, and enjoy!
Tips
Check to see if the pan is hot enough to start by dripping a tiny amount of water on it. If it sizzles and disappears right away, it is ready.
Place a weight or press with a spatula during cooking to attain even cheese melting and a compact sandwich.
Remove pan from burner when done to allow both of them to cool.
Try adding other kinds of food to the sandwich like grilled ham, thinly sliced tomato, bacon, you name it, you can add it to a grilled cheese sandwich.
Mayo can be spread on the bread instead of butter.
Mix up the bread and cheese combos for delicious varieties on this standard. Just make sure you slice the cheese thin enough if it's not pre-sliced.
American cheese with white bread
Monterey or Pepper Jack cheese on wheat bread
Swiss cheese on rye
Sharp or extra sharp Cheddar on Sourdough bread
Warnings
A little bit of common sense, but always turn pan handles away from the edge.
Don't put on too much cheese. If it is too thick, the bread will be brown enough before cheese is melted all the way. Not a desirable result!
Be careful not to add certain items to the sandwhich, such as raw chicken or any kind of fish.
Hot cheese will burn the roof of your mouth severely if you don't let it cool a bit before biting.

Croque Monsieur are better......it's a french grilled cheese......lol i'm american though...lol
2 tablespoons unsalted butter
3 tablespoons all-purpose flour
2 cups hot milk
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Pinch nutmeg
12 ounces Gruyere, grated (5 cups)
1/2 cup freshly grated Parmesan
16 slices white sandwich bread, crusts removed
Dijon mustard
8 ounces baked Virginia ham, sliced but not paper thin
Preheat the oven to 400 degrees F.
Melt the butter over low heat in a small saucepan and add the flour all at once, stirring with a wooden spoon for 2 minutes. Slowly pour the hot milk into the butter–flour mixture and cook, whisking constantly, until the sauce is thickened. Off the heat add the salt, pepper, nutmeg, 1/2 cup grated Gruyere, and the Parmesan and set aside.
To toast the bread, place the slices on 2 baking sheets and bake for 5 minutes. Turn each slice and bake for another 2 minutes, until toasted.
Lightly brush half the toasted breads with mustard, add a slice of ham to each, and sprinkle with half the remaining Gruyere. Top with another piece of toasted bread. Slather the tops with the cheese sauce, sprinkle with the remaining Gruyere, and bake the sandwiches for 5 minutes. Turn on the broiler and broil for 3 to 5 minutes, or until the topping is bubbly and lightly browned. Serve hot.

well get you two slices of bread. Heat the pan , spread butter or spray slices with PAM then put in one slice then the cheese then the other slice of bread. Let brown. then flip over and finish browning. Mine is always crispy!

you could use older bread, but it would be better if you buttered 2 slices of bread and put some butter in a frying pan put the first slice of bread in the pan add 2 slices of cheese add the other piece of bread and fry on like med. high, that's what makes it crisp, also bakery bread does better for grilled cheese than store bread does.god I never worked so hard making a grilled cheese sand.

Be sure to use white bread and American cheese. Anything else you won't get the best results.
Melt about a tablespoon of butter in a hot frying pan. Toss is two slices of bread and cook until bread is brown and crisp on one side. Remove bread and add another tablespoon of butter. After the butter melts return bread uncooked side down to the frying pan. Put one slice of cheese on each side of bread then put the sandwich together. Cook for a little more turning the sandwich over until the cheese is melted and the bread is toasty. Enjoy!

All the kids around want aunties, cheese sandwich. I dont know why, but i put my butter and margarine in pan melt , dont get it brown, med heat have cheese and bread read (white texas toast ) and white and yellow sliced cheese from deli. one whole peice in middle the other goes all four sides. put top on, left and peak till golden add more butter margarine to pan, flip, only flip once. mm good with hot bowl of tomatoe soup using milk, top with shredded cheese mm good.

Put real butter on one side of slice of bread, put it in frying pan butter side down, put one slice of American white cheese on the bread (if you like it really cheesy put two slices on)--butter the other slice of bread and put it on butter side up. Put burner on medium or a little over medium, and keep checking it to keep it from burning too much, flip and cook the other side the same--Now you have a good sandwich...I like mine a little burnt and crispy..ENJOY-- PS Don't forget to turn the burner off...(:>}
