Fish has more omega 3 fatty acids supposed to be good stuff.

Both are good as a treat, although not as their complete diet. Cat food has lots of vitamins and minerals that chicken and fish cannot provide on their own

chicken is better, fish now and then only, cats sometimes have reactions with to much fish in the diet and it lacks the vitamens and such that cats need in a balanced diet. a diet rich in fish can cause problems such as a thiamine deficiancy. cats have a higher protein requirement than other species. so they need a good balanced cat food. with human food only as a treat now and then.

It is always good to have variety in a cat's diet. I would use a little of both and for treats only. Any meat that is cooked for a cat lacks taurine (destroyed by cooking) which is essential for eye and heart health.
Never give your cat bones with cooked meat. Cooked bones are the one that splinter, raw meat bones do not.
