Fish Pie

1 1/2 lbs white fish fillets (or half white and half salmon)
2 cups milk, maybe ½ cup more,depending how thick you want the sauce
4 ounces margarine or butter
1/2 cup all-purpose flour
4 ounces peeled prawns
2 chopped hardboiled egg
1 tablespoon small capers
3 tablespoons chopped fresh parsley
1/2 cup peas
1 finely chopped celery rib
1 tablespoon lemon juice
FOR THE POTATO TOPPING
2 lbs freshly cooked potatoes
1 ounce margarine or butter
2-3 tablespoons sour cream
a good grating nutmeg

Preheat oven to 400 degrees F.
Put the fish in a baking dish and season with salt and pepper.
Pour over 1 cup of the milk and dot with a few flecks of butter, bake in the oven for 15 minutes.
Strain but reserve the cooking juices, remove any skin from the fish and flake the flesh in large pieces.
Make the sauce, melt the rest of the butter in a saucepan, stir in the flour and cook it for 1 minute, start adding the cooking juices bit by bit, stirring all the time, after that add the rest of the milk, if still too thick just add a little more milk.
Season the sauce with salt and pepper.
Mix in to the sauce: fish, prawns, eggs, capers, parsley, peas and celery, add the lemon juice and check the seasoning.
Pour the fish mixture in a 1½ liter greased ovenproof dish.
Mash the potatoes with the butter, sour cream and nutmeg, check the seasoning, and then spread this on top of the fish.
Bake in the oven at 400F for 30 –40 minutes.

~~~hmmm,,,,for some reason I dont even know if there is such a thing,,,but if there is chicken pot pie,,,and beef pot pie,,,why not fish pot pie,,,but what kind of fish,,,,mabey if they were tiny little pies like for hourdervs,,,thoses would be too bad,,,~~~

Yeah there is. Its usually a white fish flaked and covered with white sauce, topped with mashed potato. Its quite nice actually.

Yes,but it tastes disgusting. Think of chicken pot pie,but with fish in it. YUCK!!!

Asparagus Salmon Pie
1 pound fresh asparagus
1/2 cup chopped onion
2 tablespoons butter
3 eggs, lightly beaten

1/2 teaspoon dried basil
1/2 teaspoon salt
1 can (14-3/4 ounces) pink salmon, drained, boned and flaked
1 unbaked pastry shell (9 inches)
Place asparagus in a large saucepan with enough water to cover; cook until crisp-tender. Drain well. Reserve six spears for garnish; cut remaining spears into bite-size pieces. Set aside.
In a small saucepan, saute onion in butter until tender. Set aside.
In small bowl, mix eggs, milk, parsley, basil, salt and salmon. Add sauted onion. Place cut asparagus in pastry shell; top with salmon mixture. Arrange reserved asparagus spears, spoke fashion, on top. Cover edges of crust with foil to prevent over-browning.
Bake at 425° for 30-35 minutes or until filling is set. Yield: 6 servings

Tuna Spaghetti Pie
4 ounces spaghetti, broken into 2-inch pieces
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1 tablespoon butter or margarine, melted
1 garlic clove, minced
1/4 teaspoon salt
1/8 teaspoon pepper

FILLING:
1 tablespoon finely chopped onion
1 teaspoon butter or margarine
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/4 teaspoon celery salt
1/4 teaspoon garlic and herb seasoning
1/8 teaspoon pepper
1/4 cup milk
1/4 cup sour cream
1 egg, beaten
1 can (6 ounces) tuna, drained and flaked
1/4 cup grated Parmesan cheese, divided
1 small tomato, thinly sliced
Minced fresh parsley
Cook spaghetti according to package directions; rinse in cold water and drain. In a bowl, combine the spaghetti, Parmesan cheese, egg, butter, garlic, salt and pepper; mix well. Press onto the bottom and up the sides of a greased 9-in. pie plate; set aside.
In a skillet, saute onion in butter until tender. Remove from the heat. Stir in the flour and seasonings until blended. In a bowl, beat together the milk, sour cream and egg. Stir into the onion mixture until blended. Fold in the tuna; spoon into crust.
Sprinkle half of the Parmesan over pie. Arrange tomato slices over cheese; sprinkle with remaining Parmesan. Bake at 350° for 35-40 minutes or until crust is golden and filling is puffy. Sprinkle with parsley. Let stand for 5-10 minutes before cutting. Yield: 6 servings.
