Haas avocados are supreme. They are the ones with the bumpy dark green skin, not the smooth kind. Murphy's law almost always determines that you will only have the smooth kind. Use it and remember to use the Haas next time, you will notice a dramatic difference. I have lived all over the southwest with it's Mexican influences, and our California guacamole is the best. Mash two ripe avocados leaving some pieces in moderate chunks. Mince one white or green onion, 1 small tomato, 1 jalapeno pepper with or without seeds and a handful of diced Cilantro. Squeeze the juice of one or two limes or one lemon, salt and little pepper and mix well. Leave the avocado pit in the mixture to discourage browning, and chill just a little before serving with blue or yellow tortilla chips. There will be nothing left in the dish after about 10 minutes, so make some more.

Hass avocado is the best avocado for making guacamole. It is available all year round. The skin turns from green to purplish-black when it becomes ripe. 80% of all avocados grown in California are Hass.

I don't know what others have to say about this but I like to use Haas avocados. They have a different taste and are an oily fruit. Which makes them taste even better.

Haas. But if your avacadoes are still hard do this:
Place them in a large mixing bowl with some pinto beans over them to make them ripe for a few days.

Hass. Use them when they're soft but not too mushy. You can buy them when they're still hard and wrap them in a towel and put them in a drawer for a few days and they'll ripen up nicely.
