Some frozen peas and either diced pimento from a jar or diced red pepper for color. Make sure you use fresh mushrooms--they're so much better than those little shriveled ones in the can!
Thyme is a great herb to use with chicken, as is rosemary. Rosemary is a little strong, though, so only use a little.

bone the chicken (no I'm not being vulgar) and then boil the bones for a couple of hours in about 3/4 pint of water to make your own stock. Put the stock in the fridge overnight and it will set as a jelly. Use that as the base to your casserole. Fry all the ingredients first (onions, carrots etc including the chicken), to caramelise them (converts the acids to sugars...especially with onions) and then add it all to the stock you made. Then....deglaze the pan you've use with white wine and add that as well. The cheapest wine you can find will be fine. Use as much as you like. Salt and pepper (obviously) and don't over do the herbs...you don't need them. Maybe just a tiny amount of Thyme and parsley. Try not to put tomatoes in it, keep it white. You could add some single cream or even sour cream is quite nice.
I'd keep the celery. But cook it whole and at some stage remove it. Most people like the taste of celery when they don't know what it is!!!

Try this, it is really good
Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Easy Chicken Casserole:
Prepare this nutritious and flavor packed one-dish meal in 10 minutes. Then bake and serve for an easy and satisfying meal.
1 can (10 3/4 oz.) condensed cream of chicken soup
1/2 cup milk
Dash white pepper
3 cups chopped chicken or turkey
11/2 cups (10 oz.) frozen vegetables, thawed and drained
1 can (4 oz.) mushroom pieces and stems, undrained
3 cups Sunny Select Corn Flakes cereal, crushed to 1 1/2 cups
2 tablespoons margarine or butter, melted
1/4 teaspoon ground thyme
Preheat oven to 350*F. Lighty grease 2 quart baking dish. Combine soup, milk and pepper. Stir in chicken, vegetables and mushrooms. Pour into prepared dish. Combine cearl, margarine and thyme. Sprinkle over top of chicken mixture. Bake 35 to 40 minutes or until brown and bubbly.
Makes 6 Servings.

I love brocolli with chicken and ad lots of cheese I am a cheese lover, Love going to Wiscnsin, and being called a Mainiac Cheesehead LOL. Try some crm soups like suggested, add some heat w. pepper flakes. Add egg noodles, or rice to have a one dish meal. Or put some chicken gravy and biscuit topping or pie crust topping, then u got pot pie. Serve with nice warm buttery rolls or bread to soak up the gravy. I add left over mashed potatoes to mine, and its soo thick and yummy.

Chicken Casserole
One of our family favorites, soon to be yours! Double the recipe and freeze half for another meal later, and enjoy it twice as much!
Ingredients
1 box Chicken flavor stove top stuffing, dry
1 stick Margarine/butter,melted
2lbs. Chicken (cooked and shredded or cut up)
1 can Creme of chicken soup
1/2 cup Sour cream
1/2 cup Chicken broth
Preparation
Combine stuffing with melted margarine/butter. Put half of stuffing mix in bottom of 9x13 baking dish. Put chicken on top of dressing. Combine chicken soup, sour cream and broth. Put this on top of chicken. Put remainder of stuffing mix on top. Bake at 350 F for 30-40 minutes. Enjoy!

swede will be great, goes very well with carrots.
fresh herbs, tarragon or rosemary will add favour and try some organic vegetable boillion for stock. a dried bay leave would be good too.
use a few black peppercorns instead of ground pepper.
dont go crazy, chicken and veg have their own great favours and you dont want to spoil them.
cook it slowly for the best favour.

Garlic is good, cook the chicken in garlic and then finely chop some and add to the gravy,
Also i like to add sage dumplings or choped potatoes...the potatoes might make it into more of a stew though..

why? Chopped up fine, celery is fantastic for this recipe. Take it from someone who has always hated celery. Cook it well though and cook it before your other ingredients.
