Chopsticks can pick up food such as vegetables or meat more precisely and accurately,and allow food to be picked up with more ease(if you know the proper way to use chopsticks).
The strength you apply to holding the item can differ by your control. By controlling the strength applied, you won't drop a thing, and you won't "squash" the food either.
Food is also generally thought to taste better (an old myth), if you use chopsticks. And it also seems more polite to dig in into the shared dishes if you use chopsticks, because spoons push stuff over the sides off the plates if they go too close to the edge.
