I always like to think of it as the roast beast from "How the Grinch Stole Christmas".

They stab it with their scaly knives but they just can't kill that determined roast beast. :D

(have no idea who/what it actually refers to)

The "beast" is the California lifestyle (Southern California, that is) which is easy to slip into and hard to get out of. Only the people who've moved to SoCal from some place more normal can really understand the song. Seger's "Hollywood Nights" expresses the same basic theme.

And here's another bit about that line:

------------
The line "They stab it with their steely knives but they just can't kill the beast" is a reference to Steely Dan. They shared the same manager and had a friendly rivalry. The year before, Steely Dan included the line "Turn up The Eagles, the neighbors are listening" on the song "Everything You Did."

So, relax. The song is not something you need to worry about.

The "beast" of the song? I don't have a clue, haven't heard it in a while.
The "beast" in the Bible, the 666 beast, is actually the 'devil' in human form. Supposedly. Or some one possessed by the devil.
It's in the Bible, every Bible I've ever read as a matter of fact, and not a "Sect" thing. Try reading Revelations at the end of the Bible and maybe it'll help clear the air for you.
Also note that scientists and the church marked the start of Revelations in 1945.
