There are some DMV offices open on Saturday. Also, if you are a AAA member they have some offices that are open on Saturday and service DMV registrations.

Can you operate the car without plates? NO. You need to go to the DMV and get a single day "trip" permit. You may not need to however, if you have all of your paper work and smog certs with you.

In Mo. our DMV is open 'till noon on Saturdays. Get temp tags unless everything is in order and you can get the real plates. Temp tags give you time to do what needs to be done so you can get the regular plates.
You should have a "bill of sale" and the title from the former owner if you bought it privately. This should allow you to drive it home and park it. You can also drive it to the DMV to get temp tags or plates and get the title transferred. But not anywhere else.

In Michigan, you're allowed to drive it home, but must do so within the first 48 hours of purchase. I don't know about California. Every state is different. Just drive directly to DMV and buy plates. You probably won't get caught anyway. And if you do, show them the paperwork and be nice, and they'll probably let you go. Really, how many times has a cop been on your tail to see in your life? Not many. So don't worry, just do it. Bring your screwdriver or whatever when you go to DMV. If you just can't, put the plate stuck up in your rear window and go home and find someone to do it for you.

Absolutely not!

You'll have to use your legs or ask someone else to drive you to get the new plates.
