the smartest way to defeat a phobia is to face it. I'm not saying go right out and watch silence of the Lambs again right away. Watch other films staring Jodie Foster or Anthony Hopkins, get used to their voices as actors and it will help you to realise that is fictional. There is even a song about it called 'Lotion' be Greenskeepers.
So my reccommended steps to recovery is:

Get used to the Characters as actors.

Begin to talk about the film with other people.

Begin to experience things about the film, example the song i mentioned or even parodies of the film.

Then you could get used to Anthony Hopkins as Hannibal Lector by watching Hannibal or Red Dragon.

Then, when you feel comfortable and only when you feel comfortable watch the film again. If it gets too intense stop and ask yourself why.

If your looking for a film that has one of the actors in it Inside man would be good becuase Jodie Foster is only in it very briefly but she speaks quite alot and also fits seamlessly into the plot so you might even forget that your listening to her.

And i can relate to having a phobia about a film. I remember when i saw Hocus Pocus (yes, the one with Bette Midler) It scared me past the point of being scared. I had to check under my bed every ten minutes.

I'm sorry this is happening to you. You may need a professional for help with this and maybe anti-anxiety meds. One way is to force yourself to watch the movied muted, have control of the sound and the off button. but do it in daylight with a friend.

If you can't do that do seek a pro's help. You must realize this that it is not about the movie. If you developed a phobia about this movie and you overcome it, something else will pop up to cause you fear.

You need to find the core issue and realize it isn't really the movie., but something deeper.

Remember, they are only actors playing the part...I listen to the theme song, when Ted Levine was dancing in front of the mirror,...Goodbye Horses, by Q Lazarus...once you listen to it all the way through...you stop relating it to the mental scene...anyway...your mind is playing irrational games on you..remember, they are just actors...no more, no less

Perhaps a nice Chianti might take the edge off? I think Fava beans may also have anxiolytic properties.
