Buttermilk in a recipie acts as a rising agent-- usually when a recipie calls for buttermilk, it will also have baking soda in it! Recipies using baking powder for the rising agent, will usually call for plain milk!! So, to answer your question, your cake will rise up & be light!! Good luck!

according to cooks illustrated...buttermilk makes products lighter crisper and softer..flakier, . it can also depending on the recipe add a slight tang...

it also says you can make your own "buttermilk" using 1 cup milk with 1 TBs white vinegar (let sit to curdle) and you would be hard pressed to tell the difference...

never tried it but i know it makes bisquits lighter try it and see it wont hurt anything
