Some scents really are stronger at night ; some wild flowers, and some garden flowers. Some flowers give off their scents only at night to attract moths.
Plants use floral scents to attract pollinators or to repel harmful insects. Floral scents begin as oils that are produced by the petals in most plants. These oils evaporate easily in warm weather. In the night, the weather is cool thus evaporation of such oils takes longer, thus makes a stronger perfume in the night air.

Almost every living plant on this earth has evolved to do something because t doing so has given it the evolutionary advantage other it's rivals.
Therefore, if all plants were to release thier parefume during the day, they would each need to share the pollentaion insects of the day. The plants that release thier perfume at night can take advantage of the pollenating insects that fly at night, and thus, there is less competion for insects than there would be if they did so during the day.

Flowers produce scents in order to attract pollinators.
There are many species of plants whose flowers are active at night in order to attract these animals. Typically bats and moths are the animals night-time flowering plants use.
Remember that animals can't see as well during night hours, even with good nightvision so they must detect the flowers some other way... Because flowers share a mutualistic relationship with their pollinators, they've adapted to help them out by producing strong fragrance.

Moonlight causes it; also during the day the sun's light probably dries them out just enough that the fragrance dissipates before it's noticed
