Simple Chicken And Rice Recipe

2 Tbsp margarine
1 can clear chicken broth
1/2 C. frozen peas
1 can cream of chicken soup (you can use cream of mushroom)
1 jar Queso (or Cheez Whiz)
1 C. uncooked rice
1/3 C. bell pepper
1/8 tsp black pepper
1/4 C. onion
3/4 lb. boneless, skinless chicken breast, cubed

In large skillet over medium heat, melt 1 Tbsp margarine and cook chicken till done, stirring often. Remove and set aside. In same skillet, melt remaining margarine, cook rice, bell pepper, and onion till rice is browned stirring constantly. Add broth and Queso bring to a boil, reduce heat cover and simmer for about 20 minutes till rice is just about done. Stir in peas and chicken, cover and cook additional 5 minutes or until rice is tender and most liquid is absorbed, stirring occasionally (will thicken as it cools).

INGREDIENTS

store-bought fresh pizza dough (whole wheat is great, if your grocer carries it)
cornmeal

fresh tomato slices
sliced red onion, Portobello mushroom, and bell peppers, lightly sautéed in olive oil
oil-cured olives

fresh or dried rosemary or basil

fresh or oil-cured mozzarella balls, sliced thickly or feta or goat cheese, crumbled

1. Preheat oven to 450F.

2. With a rolling pin, flatten and spread the dough to fit your cookie sheet. Free-form is fine. Sprinkle cookie sheet with cornmeal, then place dough on top. Drizzle dough lightly with olive oil.

3. Add toppings evenly, leaving a 1-inch border of dough showing all around, followed by herbs, then cheese.

4. Bake in preheated oven for 12 to 14 minutes, until edges are browned and cheese is bubbly.

This excellent chocolate cake recipe is moist and delicious, and it's very easy to make. It's a one bowl cake, topped with a simple chocolate frosting.
INGREDIENTS:
4 (1 oz.) squares unsweetened chocolate
1/2 cup butter
1 cup water
2 cups flour
2 cups sugar
pinch of salt
1/2 cup buttermilk
1-1/4 tsp. baking soda
2 eggs, beaten
1 tsp. vanilla
2 (1 oz.) squares unsweetened chocolate
1/4 cup butter
1/2 cup milk
4 cups powdered sugar
2 tsp. vanilla
PREPARATION:
Preheat oven to 350 degrees. In a large saucepan, melt 4 squares chocolate and 1/2 cup butter in the hot water and bring to a boil. Remove from heat and add flour, sugar and salt. Mix well with a wire whisk or eggbeater.
Then stir in buttermilk, baking soda, eggs and vanilla and beat until smooth. Pour into 13x9" pan and bake at 350 degrees for 25-30 minutes, until the top springs back when touched with a fingertip.
While the cake is baking, make the frosting. In a heavy saucepan, melt 2 squares chocolate and 1/4 cup butter together. Add powdered sugar, milk, and 2 tsp. vanilla and beat well. You may need to add more milk or powdered sugar to reach the desired consistency: the frosting should be pourable. When the cake comes out of the oven, let cool for 15 minutes, then pour the frosting over. Spread if necessary, and let the cake cool. 16 servings
