President Jefferson worked with Noah Webster in the early 1800's to create a unique American English. This was ordered to be taught in all schools. The US wanted to separate itself from Europe and specifically England as much as it could at this time.
We still use Webster dictionaries today.

The reason there are so many different spellings is that, after the War of Independence, Benjamin Franklin wanted there to be definate differences in the language between England and America, so he changed them intentionally.

I guess American people are generally very practical and rational, so they like to adjust the spellings to how they actually pronounce them.

I just read about this somewhere, but I can't remember exactly what I read...there was a president who wanted the spelling to be simpler...theater, instead of theatre...I just can't remember which president and the rest of the details...sorry. lol
