Don Quijote is an old book. There is a lot of old literature in Spanish; Historia de una escalera, Los ojos, El burlador de sevilla, La Celestina, El Cid, Libro de los gorriones, Lazarillo de Tormes, Bodas de sangre... I have taken many Spanish literature classes. The beginning style are las jarchas, followed by El Cid, then the singing minstrels, poetry, theater, etc. There are many specific time periods such as el siglo de oro.
There really is a lot of old Spanish literature. Is this the type that you mean?

Habla poco, escucha más, y no errarás.
Talk little, listen a lot, and you won't make mistakes.

No te cases con alguien con quien puedas vivir — cásate con la persona sin la cual no puedas vivir.
Don't marry someone you can live with - marry someone you cannot live without.

Those are two like saying/proverb kind of things.. pretty old..
