Being tired will make your tolerance for stress lower.

Nervousness in the middle of a conversation could mean a lot of different things: nervous about who you are talking to; not confident in what you are saying; any number of possibilities.
You could have an anxiety disorder if it is something that is impairing your life, you shouldn't feel bad about seeking help. Anxiety disorders are quite common and a lot of people have them.

It sounds like you might have a bit of an anxiety disorder. Also, if I've not eaten right and am tired I tend to become an emotional basket-case. Try keeping protein snacks on hand and see if that helps stabilize you.

If that doesn't work, seek counseling.

It sounds like you are suffering from social anxiety or General Anxiety. You can try a difference in your diet...do you drink many caffeine products? If you try natural methods and just slowing down in general it may be time to see a professional....especially if the anxiety bothers you. Some people are just anxious about getting anxious.

Remember that life isnt to be taken so seriously.

If this is distressing to you then it could be anxiety disorder. It could also be low blood sugar. I would speak with your health provider and see what they think. If they recommend therapy then give that a go... Everyone needs to talk every now and again = )
