I like them best with rat livers, hedge-apple butter, and bleu cheeze and limburger, but the cheeze must be carefully aged by placing it in a 1954 Morgan hard-top with the windows rolled up, preferably in a humid, equatorial climate. This will bring out the truly sublime taste of the wonderful bacteria and salmonella. Speaking of which, salmon and anchovies might be nice thrown into the mix, too, and top it all off with cashew worms, whipped Brylcream, and a cherry bomb. At least that's the way I like it.

I have some in the old Norge now. Would you like me to send you some? I can send it third-class to aid in the proper aging and fermentation if you like. Or if you're hungry now, my neighbor, Wilford Brimley, is a vampyre bat in his spare time. I believe he was heading to Kent this weekend for a possible Spice Girls reunion minus three, so I can get it to you airmail. (Whatever you do, though, just thank him. Don't ever let him in to use the loo, and don't ever feed him after eleven p.m.)

I've never had jellied tripe, but I *love* menudo (Mexican tripe soup with hominy) and pho bo tai nam sach (Vietnamese rice noodle soup with sliced book tripe and soft tendon). I'd probably like jellied tripe. And it's a good thing my wife isn't in the house at the moment, because even TYPING the words "I'd probably like jellied tripe" would be enough to cause a great disturbance in the Force, as if a million stomachs suddenly cried out, and were suddenly silent.

LOVE capers, though. Fantastic with baked halibut, or in the sauce for piccata di vitello al limone.

Keep the capers, but my all time favorite thing to eat is peanut butter and jellied-tripe sandwiches.
