shampoo, etc. when I get to Firenze (Florence). Where is the easiest/least expensive place to go to pick those things up?

There is a relatively large market near Borgo Pinti. It is easy to find-ask anyone on the streets. They will have what you need.

Ask where a grocery store/pharmacy there for the cheapest.
For the easiest, the airport will have them for sale in one of their stores.

Check your hotel, most all of them have all of those things in sample sizes for their patrons.
