Because you are on the computer, not in the kitchen with your hands in pastry mix.

No seriously it's easy my tip would be to make sure your hands are cold before you start it makes the pastry easier to handle.

Put the butter and flour together in the bowl but before you mix it freeze it for 10 minutes. Then put it in the blender, add your wet stuff (egg/water/orange juice), blend a bit more and then roll it out.

Try to touch it as little as possible because the heat from your hands melt the butter and that ruins the pastry.

And try another recipie if it still doesnt work.

Are you my mother?

My mum is a wonderful person but my chldhood is full of memories of trying to stuff down doorstep crusts of dry pastry on various pies that she made. I'm no better really. Don't feel bad about not being able to make pastry, it's a skill that escapes quite a lot of people.

You can. Try using a good grade of shortening if you want flaky pastry. And chill all your utensils. I have a pyrex rolling pin that can be filled with ice water. It helps produce nice flaky crusts and makes rolling easier because of the weight. You can also use a marble rolling pin.

My mom always made her pastry up and cooled overnight in the frig. before rolling on was paper and slicing.

they say people with cold hands make better pastry, so maybe you have warm hands.

Best rule is - don't add the water too quickly and stop adding it when the mix just starts to bond. Cold hands and surface are always good too!

Probably same reason I can't...hot hands!

My Mum had bad circulation so her hands were always cold and she could make great pastry.

Just buy the frozen stuff!
