I plan on deep frying fresh potatoes tonight for fries, I have never done this before. Is there some way to prep them that will make them extra yummy instead of just throwing them into the fryer as is? Any help appreciated and thanks in advance!

French Fry Basics
* Buy a $15.00 french fry cutter- available at most department and kitchen stores. aside from looking nice your fries will all be of the same size and as we all remember from culinary school: even sizes cook at even times- which is really important
* Use only russet [Idaho] potatoes
cut to size and place in a bowl of ice water ,allow to sit for 20 minutes,change water repeat
*Meanwhile heat your fat to 325 degrees- use a thermometer
* drain and thoroughly dry you fries
* gently place the fries in the hot oil using a slotted spoon or what the chinese call a spider- Do it in small batches
You will be blanching them - slightly limp w/o color
*place blanched fries on paper towels and then allow to cool in refrigerator
*meanwhile turn your oil up to 375
again in small batches fry until golden brown salting immediately
making sure that you allow the oil to return to temp between batches

Do not add too many at a time, it lowers ur heat in oil temp. Season as they come out of fryer to help the seasons stick. I love homade french fries, I love the skin stil on gives it color, and nice flavor. We sometime use a food slicer(medalion) that dangerous thing, anyway make our own chips mm good, then we season with popcorn flavors, comes in cheese , and salty and butter. I love both dusted with vinegar.

maybe a little garlic salt on them or somethig a little spicy. just make sure they really get done, before you take them out, wait until the fries get brown a little or they probably wont really be done. and they will still be too raw feeling, not that more cooked potato texture, that is much better. also try to cut them in a uniform size so they will all be done together.

Sprinkle some salt on them as soon as you take them out of the oil. The hot oil on the fries makes the salt stick.

I do that, but I coat them with Lowry's season salt first.

BE CAREFUL! Cold frozen fries will spatter all over the room and will not think twice about burning you badly with even one drop!

Let the fries stand in ice water prior to frying it makes them crisper

first, after u cut them keep them in water or they will turn brown and icky. second when ur ready to cook them crack a few eggs and scramble them, then dip the fries in the egg then coat them with 'drakes' powder or a seasoned flour. yummy and extra crispy ;D

add paprika if u want them spicey and for crunchy ness add alot of grease cook grease first then once they start siizling thats the grease add fries carefullly or u might get splashed with grease if clumsy where sunglasses and rap a towel around each arm enjoy your yummiy fries urm hungry noow

You just need to add salt/pepper or your favorite seasoning salt when you get done cooking your fresh potatoes.

Add a bunch of preservatives and cook in hydrogenated oil. So delicious.
