What is the point? They are not a cake. Why not call them what they are:

They are more like fudge than a cake, more of a candy............and yes, they cost alot but most gourmet bakery goods come at a price!

Flour-less cake is where a substitute has been used for the wheat flour.
Some people have allergies, so a substitute is used.. like potato flour as an example.
A cake with out any type of flour just wont work... the wet ingredients wont have anything to help hold them together.

Flourless Cake???? Is it possible you mean cake made without wheat flour. Cakes can be made using alternative flours for those people who have allergy to wheat & gluten. Lots of recipes (good ones) even for Chocolate Cake on the Celiac webpage

Flour is a structural element in a cake. There are cakes that may use other items as "structure". There is a delicious clementine cake that uses finely ground almonds the way you would use "finely ground wheat"...
