In the North it's rather like 'Ik', in the South more like 'Ish' but it's said with a sort of sound as if you're clearing your throat by breathing out after the 'i'.

Neither. The ch sound in "ich" does not exist in English. You need to listen to someone who speaks the language well and try to imitate them. It's difficult for most English speakers, but with practice you can get a lot closer than "ick" or "ish."

While there are a lot of dialects in Germany (which are very hard for us non-native speakers to understand), here are the standard pronunciations:
after o, au, or a--back in the throat, clear your throat. It's where you make a K or G, just let some air through and make a scratchy, gargly sound. It's really not hard to do, but you'll have to listen to German speakers.
after i, e,eu, ai, ei, ä, äu, ü and in the syllable -chen:
a sound in the front of your mouth. Get your mouth ready to say 'yes' (tongue up behind your top teeth) and blow. Make a breathy sound like an angry kitten. Again, easy to do once you have the idea.
As a non-native speaker, I try not to imitate dialectal pronunciations because I fear that people who have that dialect will think I'm mocking them! I try to sound like an educated TV commentator, so that my pronunciation is familiar to everyone, and I don't sound like I come from anywhere in particular.

It depends where in Germany a person's from. Both are exceptable, as long as the "ick" is softer than we say it.
