As A dad I feel I am qualified to answer this. We don't get more stubborn. We remain the same. It is our children that grow up and become adults of their own rite.

When you are young dad (or mom) does all your thinking for you. When you get older you begin to think for yourself, some of your ideals are different from dads and you want him to see things your way, sometimes he might, but more often than not he will continue to think like he always has. Thus he doesn't think like you creating the illusion in your mind that he is stubborn.........

Because the older one gets, the more set in their ways they become. You have to remember that your Dad has been doing things the same way, year after year. It is hard to teach an old dog new tricks, as the saying goes. Coming from a household where my Dad is also very stubborn, I know it is difficult to live with. It is especially more difficult when you are stubborn as well, because the two will constantly butt heads. Since it is your Dad, and since you will probably never win, just try to grit your teeth and bear it, unless you feel that is is a something of great importance that needs to be clarified.

As the kids get older he mostly wants to be confident they will be happy or succeed and it is a slow weaning process that I think is inherent while the mother is protective and more open.

I understand this very much. They are just stuck in the past and don't know how to get out. Hang in there.

I think some old people think that they got to their age, by doing exactly what they're doing. So why change it if it works. Also I think they're less tolerant (or open to) sillyness and tomfoolery.
