I use grilled onions, sweet, like Bermudas, Mazzetti brand sweet/hot cherry peppers sliced, Zatarain's Creole mustard, on a sour dough baguette....olive oil and vinegar, kosher salt, fresh ground black pepper... and if you like 'em hot, Evergood hot sausage...steamed and then grilled...mild, use Usinger's Brats from Milwaukee. Romaine lettuce and tomatoes optional, a few alfalfa sprouts to top it all off are good, and a big fat whole Nathan's New York dill pickle. A cup of homemade cole slaw (recipe on the Tabasco sauce box) you are in sausage HEAVEN!

Here is one for hotlinks. Sounds strange, but you must try it! Get some sliced fresh roast beef and a package of your favorite hotlinks. Cook the roast beef and hot links until done and stack in the pan. Put a slice of Provolone cheese on top and let it melt. Prepare a french roll (or any bread you like) with mayo, mustard, lettuce, onions, tomato and pickles and put your sandwich together. Serve with french fries and enjoy!

Mild Italian sausage slow simmered in good thick tomato "gravy" and served on a hoagie roll with plenty of fried green peppers and onions.
