Sweat glands excrete moisture (basically a thin layer of salt water) that covers the skin. The sweat evaporates from off the skin; due to the heat transferring properties of water, the evaporation cools the surface of the skin.
At the same time, blood vessels move closer to the skin, and (thanks to thermodynamics) release heat to the skin in essense cooling the blood. The cooled blood circulates back through the body. As it does so, the blood picks up thermal energy from the body's core (torso, abdomen, head), and moves that heat back out to areas that are sweating, where it is once again cools. The entire body will cool down gradually until normal operating parameters are regained.
Sweating is extrememly important. The cooling provided by sweating is so necessary that when unable to do so the effects can range anywhere from nausea and vomiting (heat sickness) to loss of consciousness and death (heat stroke).

Sweating is one of the ways that the body cools itself. Sweat is produced in the sweat glands and when the sweat evaporates it cools the body. In addition to water , the sweat contains electrolytes (mainly sodium chloride) which are lost to the body.
