You can take a cooler and pack it with ice. Coolers and ice can be found almost anywhere (Walmart, Grocery stores, Target, etc). If it is best served hot you can rewarm it when you get there or buy something like this:

which will keep it hot or cold.

Here’s what I would do.

As those before have stated, you may want a cooler. You can buy an inexpensive one at the local supermarket or Target, Wal-Mart, etc.

Then freeze some bottles of water, this will help keep your cooler cold as well as give you something cold to drink later. Then I would get my wife (she makes the best) to make some fried chicken. The day before and cool that down in the refrigerator.

Then when the day of departure arrives, pack up your cooler with your fried chicken some snacks and some fruit and some raw veggies and in a separate bag miscellaneous junk food.

Oh, and don’t forget the entertainment, I prefer books on tape. You can get them free at most libraries.

I hope that this helps.

Let's see - a husband or wife and a couple of kids would be good - provided the kids are not too young as they don't travel well for periods of two hours!

Just kidding. Try these salads.

The Bean salad can marinate on the way and go into the fridge for an hour or so before serving. The Tomato Basil salad can be transported in pieces and put together on site. You can use a juice container with a screw top to transport dressings or marinades - they won't go bad - they'll just get better!

Tomato Basil Salad (for 4):

Dressing:
2 large Cloves Garlic-smash before chopping
1/2 Lemon - Juice only
1/4 Cup olive oil
6-8 Fresh Mint leaves finely chopped
Salad:
4 plum or roma tomatoes quartered & remove seeds
16 Large fresh Basil Leaves - tear each leaf in 1/2
1/2 medium Vidalia (sweet) onion - Spanish is okay too - cut in nice slices - not too thin or thick
1 ball of bonconcinni cheese
salt
Fresh ground black pepper
Chopped Cilantro as garnish

In a glass bowl mix smashed and chopped garlic, lemon juice, olive oil, and mint leaves, salt and cracked/ground pepper. Mix with a whisk and cover, on counter for 1 hour - don't refridgerate as flavours meld better and faster at room temperature.

Nicely set out on a serving plate the torn basil (don't chop it), quartered tomatoes, sliced onions, and about 8 slices of the cheese.

Whisk dressing again and pour as desired over salad. Add chopped cilantro on top.

Lovely, and healthy - enjoy!

Garbanzo Bean Salad

In a glass bowl, mix:

2 large Cloves Garlic-smash before chopping
1/2 Lemon - Juice only
1/4 Cup olive oil
6-8 Fresh Mint leaves, finely chopped
3 fresh Basil leaves, finely chopped
¼ teaspoon chopped fresh Oregano
¼ teaspoon mix of chopped fresh thyme and marjoram
1 can rinsed and drained chick peas (garbanzo beans)
1/3 can rinsed and drained red kidney or Romano beans
1/3 can rinsed and drained chopped green or Broad beans
1 chopped roma or plum tomato
1/2 chopped sweet onion – Vidallia or Spanish
1/2 chopped green or not quite ripe mango
2 tbsp. chopped Cilantro
½ teaspoon salt
½ teaspoon freshly cracked black pepper (a bit chunky)

Mix and let sit, covered, at room temperature, for at least ½ hour. Stir gently to mix flavours, and refrigerate for at least 1 hour prior to serving.

Many people do not realize that fresh Romano, Kidney, and Green Beans (July – September) combined with dried and soaked Garbanzo beans have a much better flavour than canned. Try it using both styles and see the difference for yourself!

However, for the sake of convenience (and winter – I live in Ontario!) – canned works quite well, but you must fully rinse all the beans before putting them in the salad to give the maximum herb flavour.

It is very appealing if you serve this salad on small plates in lettuce cups, but even more so if you use the outer leaves of Riddichio as your bean salad bowl.

well if you need to keep it cold, use a cooler. put the ice in plastic bags instead of having loose ice, or u could freeze plastic bottles of water( wash out empty 1/2 gallon milk contains the bigger the block of ice is the longer it takes to melt...ie the farther you can go, and almost every one drinks milk) make sure the food is in a very tighly sealed plastic container. wrap the plastic container of food in foil. it should last for 2 hours if not, you could always stop and buy more ice. if you want to keep it hot/warm put the food in a non stick microwavable container wrapped in foil. but instead of ice, put a dishtowel in the microwave or dryer till it is hot then wrap the food up in it. my grandma would get potatoes or little rocks really hot in the oven and put inside of the blanket. but if all else fails...there are special containers that you can buy to keep your food hot. (like the things the pizza guys use when they deliver)

You can make this easy fruit salad and it's really good. Then you can transport it in the cooler and the frozen strawberries will also keep it cool.

You take chunk pineapple, mandarin oranges and drain them. Mix them together with a can of peach pie filling. Then mix all that together with a bag of frozen strawberries. Slice the strawberries. Cover that and it will keep cool. Take a few bananas and slice them and mix them in with your fruit mixture when you get there. Easy and delicious.
