Get 1lb of great northern white beans
soak overnight (12 hrs)
Drain and rinse (This reduces gas)
Put in a pot with a split hamhock, garlic and chopped onion and two bay leaves with enough water to cover by 1 inch.
Simmer for a couple of hours until the beans are still firm but soft enough to be crushed with a spoon.

Remove and discard bay leaves.
Drain some water from the beans or add as necessary to get a soup consistency.

chop the meat of the ham hock up and return to pot

Now add 1 cup of boiled potatoes that have been mashed without adding milk or butter.

Season with salt and pepper.

This is a version of US Senate Navy Bean Soup

"I know, by my scientific reading, that either thermometers or barometers ought to be boiled, to make them accurate; I did not know which it was, so I boiled both. There was still no result.
...I hunted up another barometer; it was new and perfect. I boiled it half an hour in a pot of bean soup which the cooks were making. The result was unexpected: the instrument was not affected at all, but there was such a strong barometer taste to the soup that the head cook, who was a most conscientious person, changed its name in the bill of fare. This dish was so greatly liked by all, that I ordered the cook to have barometer soup every day."

* 1/2 cup dried common white beans
* a small piece of salty ham, ham bone, or bacon
* 4 cups boiling water
* 1 bay leaf
* 1/4 teaspoon white peppercorns
* 3 whole cloves
* 1 carrot, diced
* 3 celery stalks, with leaves, chopped
* 1 onion, chopped
* 2 garlic cloves, minced
* 1 potato, grated


Soak the beans overnight, then discard water. Put beans, ham/bacon, boiling water, bay leaf, pepper, and cloves in a pot and cook slowly until the beans are soft, about 2-3 hours. Add the carrots, celery, onion, garlic, and grated potato and cook 30 more minutes.

Remove the meat and shred. Put the soup through a food mill or processor. Thin, if you like, with water or milk. Correct seasoning. Ladle into bowls and top with croutons and parsley.

Here is an authentic Portuguese recipe for STONE SOUP.

Soupa de pedra a Ribatejo.

6 oz red kidney beans, soaked overnight and drained
4 oz piece of smoked bacon
4 oz piece of chorico
1 onion chopped
1 clove garlic peeled and crushed
1 bay leaf
2 carrots diced
3 celery sticks diced
1 lb potatoes peeled and diced
4 oz cabbage shredded
1 litre of chicken stock
salt and pepper
1 oz chopped coriander


Put the drained beans in a saucepan and cover with water. Cook till tender. Drain the beans.

Put the bacon in the pan and cook to release the fat from the meat. Add the chorico, onion, and garlic. Cook till the onion is soft.

Add the beans and bay leaf, vegetables, chicken stock, salt pepper and most of the coriander. Cover and cook for 30 mins.

Remove the bacon and chorico from the pan and dice the bacon, slice the chorico. Return the meat to the pan. sprinkle the remaining coriander onto the soup and serve.

There are of course many other recipes for beans in soup, but, I thought that you might to try this as it is a bit different from the rest.
