Well an egg yolk is Yellow but if you want to say it anyway you would say it an egg yolk is white you cant have a next to a word that starts with a vowel.

AN egg yolk is white always say an before a vowel sound, you also say it before silent consonants such as in the word hour.
Oh you got me, I had even thought about it for a second thet it was yellow but for some reason dismissed it. I feel stupid because I usually don't fall for that kind of thing.
