Tequila Lime Chicken
Marinade
1 cup water
1/3 cup teriyaki sauce
2 tablespoons lime juice
2 teaspoons minced garlic
1 teaspoon mesquite liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon tequila
4 chicken breast fillets
Mexi-Ranch Dressing
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon milk
2 teaspoons minced tomato
1 1/2 teaspoons white vinegar
1 teaspoon minced canned jalapeno slices (nacho slices)
1 teaspoon minced onion
1/4 teaspoon dried parsley
1/4 teaspoon Tabasco pepper sauce
1/8 teaspoon salt
1/8 teaspoon dried dill weed
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder
dash garlic powder
dash ground black pepper
1 cup shredded cheddar/monterey jack cheese blend
2 cups crumbled corn chips or fried tortilla strips (see tidbits)
1. Prepare marinade by combining marinade ingredients
in a medium bowl. Add the chicken to the bowl, cover and
chill for 2 to 3 hours.
2. Make the mexi-ranch dressing by combining all of the
ingredients in a medium bowl. Mix well until smooth, then
cover dressing and chill it until needed.
3. When you are ready to prepare the entree, preheat the
oven to high broil. Also, preheat your barbecue or indoor
grill to high heat. When the grill is hot cook the marinated
chicken breasts for 3 to 5 minutes per side, or until
they're done.
4. Arrange the cooked chicken in a baking pan. Spread a
layer of mexi-ranch dressing over each piece of chicken
(you'll have plenty left over), followed by 1/4 cup of
the shredded cheese blend. Broil the chicken for 2 to 3
minutes, or just until the cheese has melted.
5. Spread a bed of 1/2 cup of the tortilla strips or crumbled
corn chips on each of four plates. Slide a chicken breast onto
the chips on each plate and serve with your choice of rice,
and pico de gallo, or salsa
Serves 4.

oOkay get boneless skinless chicken breasts. About 3-4 to a pack. Take 1 cup of Italian dressing and several dashed of Lea & Perrins or Worchester sauce mix the liquids together in a large tupperware bowl you can seal. Put the chicken in and shake it up, let it sit overnight in the fridge. Take out the next evening and bake in the oven at 375 degrees. Cover them the first 45 min with foil, then uncover and cook until desired browness on top of chicken.
Serve with an easy rice dish and some fresh veggies!

Chicken casserole
Make about 2 cups of rice brown 2 skinless boneless chicken breasts in a skillet with a little chopped onions and some Worcestershire sauce get a vegetable trio like green beans corn and carrots either in a can or frozen if frozen heat them up in the microwave for a minute or so. open a can of cream of chicken soup put half the cooked rice in a casserole dish and then throw in the veggie trio and the chicken breasts that you will have cubed up into bite sized pieces. Put in the cream of chicken and then top with the other half of the rice. I like to put cheese on top of that I prefer sharp cheddar but what ever you got will do. Put the casserole in the oven on 350 degrees for 40 minutes. Salt and pepper to taste along the way. Dig in and enjoy!!

Take about 1 1/2 - 2 pounds chicken, cut into chunks and cook up in a dutch oven.
Add a bag of mixed vegetables
Add a can of cream of mushroom soup.
Maybe a little milk.
Stir. Cover. Put stove on low. Walk away for 15-20 minutes.
2 1/4 cups Original Bisquick
2/3 cup milk
Mix together. Stir your chicken mixture. Take a spoon and drop small biscuits/dumplings on top of your chicken mixture. Cook for 10 minutes. Then cover and cook for 10 minutes.
Chow down.
My nephew who is 10 can make this, therefore you can.

Salsa Chicken! I made this the other night and it's excellent and super-easy!
4 chicken breasts
2 cups salsa
1 can diet coke (MUST be diet!)
Brown the chicken in a skillet over medium heat (no oil or butter or any fat). Once it's browned (yes it might stick a bit, don't worry) pour in the salsa and coke and drop the heat to a simmer. Cover and let it boil for 15-20 minutes or until the chicken is cooked. Take the chicken out, turn the heat up, and let the sauce boil until it reduces until it's a lot like salsa again. Pour it on top of the chicken and serve!

Get 1 can of Campbells Cream of Chicken Soup.
Get some Chicken strips
Add some Broccoli
Mix and bake in a pan at 350 degrees for 45 minutes to 1 hour
Once it's done, serve over rice or pasta

Chicken Parmesan
Serves 6
1/3 CupParmesan cheese, grated
1/4 TspItalian Seasoning, crushed
6 (4 oz) Chicken Breast, boneless, skinless
1 Tbsp Unsalted Butter
1/2 CupWhite Onion, diced
1 Tbsp All-Purpose Flour
1/2 Cup2% Milk
1 (1 oz packet) Ranch Flavored Salad Dressing Mix
6 Slices Mozzarella Cheese
1/2 (10 oz pkg.) Spinach, frozen, thawed, drained
1 Tbsp Pimiento, chopped
Instructions:
Preheat the oven to 350ºF
In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.
Stir in flour; add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.

Ooh girl, I'm not very good either, but this is easy & tastes good. Take Russian salad dressing (about an 8 oz. bottle), apricot jam (about the same amount as the dressing) & get some Lipton onion soup mix (this is dry mix, just use one packet). Mix it all together in a bowl & put it on the chicken. If those ingredients sound weird together I understand. My mom used to make it all the time & we love it! Then she told me what was in it, which sounded like a weird combo, but it tastes great. Spray your baking sheet with Pam if you have any so it's easier to clean afterwards. And then just bake the chicken for however long you're supposed to bake chicken (told you I'm not great at this either. lol.)

This one is easy, but it takes a while. It's worth the time.
Smothered Chicken
1 chicken, cut up (I use 2 packages of thighs)
1/2 plus 1/3 cup flour
1 1/2 teaspoons salt
1/4 teaspoon pepper
4 tablespoons butter
1/2 cup finely chopped brown onion
Wash chicken and pat dry. Combine the 1/2 cup flour, salt, and pepper. Roll chicken in flour mixture to coat. Heat butter in large heavy skillet. Brown chicken on all sides. Place chicken, skin-side up, in a 9 x 13-inch baking dish or roasting pan. Add onion to drippings in skillet; cook until soft. Add 1 1/2 cups water to skillet; bring to a boil. Pour over chicken. Cover tightly with a lid or foil. Bake at 350* for 60 minutes. Remove chicken and keep warm.
Carefully pour liquid from baking dish into skillet used for browning; bring to a boil. Combine the remaining 1/3 cup flour with 1 cup water; mix until smooth. Add to hot liquid. Cook, stirring constantly until gravy thickens. Taste for seasoning. Makes 4 servings.
TIP: Gravy is delicious served over rice or mashed potatoes.

Take some boneless chicken, dip in Italian dressing, then lightly dust with flour.
Put in a 9x12 pan or whatever size you may have. Sprinkle parm cheese over it.
Take a package of stove top stuffing, 1 can of diced tomatoes, and a few garlic cloves. pour in 1/2 cup of water, then mix.
Pour contents over chicken, bake at 425 for about 29 minutes. Check to make sure chicken is fully cooked. You may need to put it in longer.
