You can....
Marinate them in italian dressing and pan fry them. Add veggies or whatever sides you dig.
OR
Take chicken breasts - grill them then pour Cream of Mushroom Soup over the top and serve over rice

I posted this in another question but I'll repost it scaled down here.
2 chicken breasts
1 cup salsa
3/4 cup Diet coke (MUST be diet)
Brown the chicken in a dry skillet over medium heat. Add the salsa and coke, drop the heat to a simmer, and cover for 15-20 minutes (the two I made were done perfectly in 15). Remove the chicken and boil the sauce down until it's like salsa again, and serve over the chicken.
It takes all of 30 minutes to make from start to finish.

Pound the chicken out flat, put cheese, a slice of some kind of meat, onions, etc. Roll them up, stick in a pan, add a can of mushroom or cream of celery soup. Bake at 350 degrees about 45 minutes. Serve with a veggie and salad. Yummy!

Make a pan of rice. Bake the chicken breasts when they are done shred and put in a skillet with one green pepper diced 1/2 and onion diced and a little garlic. let those veggies soften and add on can of diced tomatoes. If you want a little spice add some red pepper flakes. serve over the rice.

Box of wild rice
can of cream of chicken soup
Put the box of rice with the seasonings, empty the can of soup and one can of water into a cassarole dish, mix it up and put the chicken breasts in the mix. Bake for 30 minutes on 350. Tastes great. You can also put in some frozen broccoli florets to get your veggies.

Dice the chicken up and pan fry in some oil with onion and mushrooms once brown add mushroom soup and 1/2 can of milk heat and serve over pasta . I sometimes add peppers or garlic while browning too.

Make an egg wash coat the chicken with spiced crushed corn flakes put in the over for 35mins at 400 then put on a bed of spinach. Serve with salad.

How many are you feeding? If you grate or chop it up you can add it to seasoned pasta for a main dish. You can also bake them and add brown rice and veggies. They are really good if you poke them w/ a knife and marinate them in Italian dressing for about 20 min. Place them in a pan w/ nonstick spray and cook until done. If they are very thick, you should to put the top on to enhance the cooking process, but make sure to release the moisture and let them brown before serving.

Cut up chicken into small strips. Put 1/2cup of flour, some garlic powder and seasoned salt and pepper in a bag. Mix well add chicken to coat. I put small amount of veg oil in pan with 1T butter. I saute a med chopped onion and sweet red pepper. Set aside. Add chicken to brown(add more oil or butter if necessary)
Return peppers and onions to pan with chicken add 2 Cups of broccoli heads and 1 cup of chicken broth and 1T of butter. Cover and stir until thickened and broccoli is cooked. Cook 12oz box of mini penne. Drain and mix it all together. I add about 1/3 cup of Parmesan cheese and mix well and serve.

Go to the store and look for the McCormick packets.. its SO SIMPLE ..easy and quick!! They rock! Good Luck!! The South West Chicken is my fav but there are over 200 different kinds.. go check it out!
