The process of blanching provides a means to "kill" the surface bacteria by emersing the vegetable in boiling water for a few minutes...this also brings out a bright color. It is then emersed into ice water to stop the "cooking" process. Foods frozen without the blanching process do not look as fresh and may tend to spoil more rapidly once thawed. ummm I believe they will just freeze ..... but dont forget to cook them when they've defrosted. :)
